Sustainabsbility guides our seafood selection. We partner with suppliers who implement responsible fishing practices to protect marine ecosystems and maintain healthy fish population. Our crab supplier in Balikpapan, Kalimantan, exemplifies sustainable fishing. We exclusively source crabs over 350g, working closely with suppliers to maintain strict environmental standards. This ensures our beloved crab pasta dishes are both delicious and ecologically responsible.
Animal welfare is a cornerstone of our philosophy. We are developing a comprehensive scoring system to standardize and elevate animal care standards. Morrah Farm in northern Sumatra embodies our principles. Their buffalo-raising practices prioritize animal well-being, allowing buffaloes to graze freely and live without stress. Each animal is individually named, reflecting a deep respect for life.
Local sourcing is intergral to our mission, with over 80% of our ingredients produced from local sources. This approach supports the local economy and protects biodiversity by minimizing artifical processes. ーZero Waste We transform potential waste - food scraps, vegetable trimmings and whey water - into resources, preventing landfill and ocean pollution. Our signature furniture celebrates sustainability: handcrafted teak from FSC®️ and SVLK-certified sources and seating woven from water hyacinth and rattan, supporting local craftsmanship and forest biodiversity.
Our culinary philosophy honors local culture, ingredients and narratives, recognizing that cultural diversity is intrinsically linked to biodiversity conversation. ーTraditional smoking techniques from the Maluku Islands, now adapted in Yogyakarta, showcase how cultural practices can preserve and celebrate local ecosystems. ーThe "Rou" brand bridges traditional and contemporary design through batik napkins featuring biodiversity-themed patterns, crafted in Yogyakarta's pristine envinroment. ーOur uniforns feature "PEACE" written in nine Indonesian languages, symbolizing unity that go beyond cultural boundaries.
