The featured dish on our grand menu, the Squid Smelt Risotto, showcases squid sourced from unconventional set-net fishing in Kumano, Mie Prefecture.
This culinary item emerged from an encounter with “Oka Fishermen’s Guid @okaryoushi” – a marine initiative in Mie Prefecture, fostering collaboration between local fisherman and professionals. Their mission revolves around addressing ocean-related challenges by bridging the gap between Mie’s fishing experts and those not affiliated with the profession.
On this occasion, we were introduced to Mie’s maritime industry overseen by Gate #gate_inc, where we discovered the concept of “unused fish” typically discarded, shedding light on how we 4P’s could make use of their potential.
There are challenges that confront our ocean, but our commitment begins with sharing invaluable treasures of the sea with as many people as possible, without wasting its resources.
