Beside other sustainable activities, we have also been implementing a sustainable menu to convey our vision to everyone. The first dish we would like to introduce is of course a pizza with the main ingredients from Thien Sinh farm – our longtime partner.
The meat is made from feral pig/wild boar, locally raised at Thien Sinh farm with a free-range model. This approach helps to ensure that they are healthy, well-nourished, safe, free to move around and able to express their natural behaviors. Everyday, they are fed with chemical-free vegetables grown at the farm, as well as wine dregs – a byproduct of the winemaking process, and drinking whey water – a nutritious byproduct extracted from our Cheese Factory.
These factors contribute to the difference in texture as well as the quality of the meat that only feel when you enjoy it. Especially, there is no strong meat odor like other industrial pork products. The softness with salty and sweet aftertaste mixed with a little bit of fat, everything melts in the mouth delicately. Combining the freshness of Thien Sinh’s organic vegetables (morning glory, morning glory sprouts, kale) and 4P’s house-made cheeses (Stracciatella, Mozzarella, Ricotta Salata) on basil & kale sauce, you’ll experience something truly unique!
