Job Summary:
We are launching a 6-month project aimed at elevating the consistency, quality, and condition of our pizza dough across our restaurants, delivery hubs and FMCG business. Thus, we are looking for a dedicated Pizza Dough Improvement Specialist to lead this initiative. The individual will play a key role in enhancing our dough recipes and processes, ensuring that we meet the highest standards in all our offerings. This role will work closely with the OD and R&D team to drive improvements and implement new dough recipes company-wide.
Key Responsibilities:
- Lead the project focused on improving the consistency, quality, and condition of our pizza dough in dine-in stores, delivery hubs, and FMCG (frozen pizza).
- Collaborate with the R&D team to develop and refine dough recipes, ensuring they meet the desired standards for taste, texture, and shelf-life.
- Work closely with the OD, F&B QC and R&D to implement new processes and procedures that optimize dough production and handling in all stores.
- Provide training and support to F&B QC and Operation teams, ensuring the smooth transfer of knowledge and implementation of new recipes and techniques.
- Monitor and assess the performance of the new dough formulations, making continuous adjustments as necessary to achieve optimal results.
- Analyze feedback from guests, management team and operation team to make data-driven improvements to the dough production process.
- Document all recipes, processes, and procedures for future reference and ensure proper knowledge transfer to relevant teams.
Qualifications:
- Proven experience in dough production, ideally within a restaurant, bakery, or related environment.
Strong knowledge of ingredients and dough handling techniques. - Excellent collaboration skills with the ability to work closely with cross-functional teams including Operations, R&D and Production.
- Strong problem-solving skills and a detail-oriented mindset.
- Ability to analyze data and make informed decisions to improve dough quality and consistency.
- Prior experience in recipe development or product improvement is a plus.
